Of course, we all hope it is not going to rain on your Wedding day. It is our unofficial kick off to our summer season. Occasionally we get bad weather. If you have an outdoor wedding party planned and the weather is not cooperating then this recipe is for you! Enjoy!
Thai Style Baby Back Ribs
2 slabs of pork baby back ribs
1/4 cup creamy peanut butter
1/4 cup soy sauce
3 table spoons cider vinegar
2 table spoons sugar
2 teaspoons hot sauce (or more)
1 or 2 large cloves of garlic (minced)
sliced green onion for garnish (optional )
Cut your ribs into 2 to 3 rib pieces.
Add peanut butter to medium mixing bowl. Gradually stir in the soy sauce and the vinegar until mixture is smooth and creamy. Stir in sugar hot sauce and garlic. This is the Thai style sauce!
In a foil lined grill, place ribs meaty side down and brush thoroughly with mixture. Cover the grill tightly with foil and grill for 1 hour. Discard all foil and drain all drippings. Add the ribs back to the grill still meaty side down. Brush with some more sauce. Bake uncovered for 15 minutes. If you don’t have a grill, we highly recommend the Nexgrill.

Turn the ribs over (meaty side up) and brush with the remaining sauce. Continue to bake uncovered for 15 minutes or longer until ribs are golden brown and tender. Garnish with sliced green onions and enjoy!
You can add more hot sauce or even red pepper flakes if you like your ribs extra spicy.
I like my ribs cooked well done. If you do as well, just increase the baking time.
